Head Chef

Roy Macaraeg is our Head Chef. He was born in the Phillipines and came to Australia in 1982 and completed his apprenticeship at the Tequila Amigo Mexican Restaurant in Traralgon. Roy first commenced with the Italian Australian Club under the leadership of Gaetano Nania in 1995. He left in 1999 and travelled to Sydney for 6 months – but the Valley was calling and Roy returned to run the kitchen at Traralgon’s Café Evviva. Roy was coaxed back to the Italian Australian Club in September 2007 as our Head Chef. He is married to Lucia and has two beautiful children Cianna and R’amon . Roy’s second family has an Italian background and it is from this that his passion for Italian food grew.Roy is responsible for all aspects of running our Bistro & Function Centre. He has to assist him – 2 Chefs, 3 Apprentices and 3 Kitchen Hands. This year we catered for the Lavalla Debutante Balls – servicing 920 guests with a 2 course meal over 2 days at Kernot Hall. This was a great success and the first time that they had tried a 2 course meal for this event. Roy is setting a standard for quality Weddings in the Latrobe Valley – whether is be for 100 or 200 guests – 2 courses to a 5 course European Banquet.
